The Story of Salsa La Jacalera

A Tradition Full of Flavor and Memories

It all began with Mario’s passion for grilling, cooking, and bold seasoning. Together with his wife, he spent countless hours experimenting in the kitchen — blending ingredients, exploring flavors, and searching for that special spark that could elevate any dish.

That’s when chiles, spices, and a touch of citrus took center stage. By combining the heat of fresh chiles with the unmistakable brightness of lemon, they began crafting a recipe that would soon win the hearts — and palates — of everyone who tasted it.

During one of those flavor experiments, they rediscovered a special chile: small but powerful — the chiltepín. It had been carefully stored for some time, waiting for the right moment. When they mixed it with lemon, something magical happened.

The very first taste confirmed it — they had created something unique. Something different.

But the true test came when Mario began adding the sauce to his barbecues: chicken wings, pork ribs, seafood, ceviches, soups, and appetizers. It paired beautifully with everything!

When he shared it with friends and family, the sauce quickly became a must-have at every gathering. No one could resist it. Everyone wanted more — and they even competed over who would take a jar home.

That’s when it earned its first name among loved ones: “Mario’s Sauce.”

The Birth of “La Jacalera”

In 2020, this passion turned into something bigger.

It all began with María Paula, Mario and Marifer’s daughter, who loved visiting her grandparents, aunts, and uncles. One day, while visiting her great-grandmother, Mrs. Roble, she affectionately told her:

“Siempre andas de jacalera.”

This traditional expression refers to someone who goes from jacal to jacal — from home to home — visiting everyone.

That phrase stayed in the family’s heart. In that moment, they found the perfect name:

The word “Jacalera” reminds us of our roots — the warmth of family gatherings, the flavors of childhood, and the sayings of our grandparents. It takes us back to those meals where more than food was shared… laughter, stories, and unforgettable moments were part of the table.
